Hands On "Zero Waste" Cooking Class

Did you know that food waste from our kitchens affects climate change? Rotting food in the landfill creates methane gas that heats the atmosphere. Learn how you can cut back on household food waste, save money and resources, and be part of the solution! In partnership with Solano County Library, Sustainable Solano‘s local food team will lead a hands-on cooking class that explores what to do with those wilting herbs, radish tops, bumper crop of peppers and more! We’ll review several recipe ideas, food storage strategies, and the real meaning of “best by” and expiration dates. Participants will make Escabeche (quick-pickled Mexican vegetables) to take home, along with Moroccan Chermoula and a seasonal pesto that will get incorporated into a light lunch for everyone.
